The Château Nico Lazaridi Dry White Wine, a Protected Geographical Indication product from Drama, Greece, is a blend of international and Greek grape varieties, including 65% Sauvignon Blanc, 30% Assyrtiko, and 5% Malagousia. This wine undergoes classic white wine vinification at low temperatures between 12-16°C, fermenting in stainless steel tanks with short maturation on the fine lees. It has an alcohol content of 12%, total acidity of 5.43 g/l, and residual sugar of 1.56 g/l. The wine presents a bright yellow color and combines the aromatic complexity of Sauvignon Blanc, emphasizing tropical and citrus notes, with the richness and acidity of Assyrtiko and the floral notes of Malagousia. It offers pronounced intensity and aromas of mango, papaya, pineapple, citrus, lemongrass, wet stone, and white flowers, leading to a full mouthfeel with pleasant crispy acidity and a long aromatic aftertaste. This wine can age for up to 3-4 years after harvest and pairs well with cooked dishes with vegetables, pasta with basil sauce, and salads with goat cheese, served at 8-12°C
